
Zucchini Bread
If you’ve found yourself up to your eyeballs with mounds of zucchini from your garden (trust us, we’ve been there), and your neighbors no longer answer the door when they see you coming with an armful of large green clubs, we’ve got you covered, friends.
Now, prepare yourself for the title, Better Than Sex Chocolate Zucchini Bread. Okay, I’m gonna go out on a limb and say that’s an awfully bold statement to make about a vegetable-laden bread, but to each his own.
Anyway, this chocolate zucchini bread is rich and decadent and no one will ever believe they are eating 4 cups of grated zucchini when you tell them. Hey, great way to sneak a load of veggies into your kiddos (or hubby)!

Better Than Sex Chocolate Zucchini Bread
4 cups grated zucchini (about 2 medium zucchini)
2 1/2 cups flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
1 cup white sugar
1/2 cup brown sugar
2 eggs
3/4 cup butter, melted
2 teaspoons vanilla
1 1/2 cups chocolate chips, divided
Preheat oven to 350 degrees.
Grease two 8×4 inch loaf pans.
In a large bowl, combine flour, cocoa powder, baking soda and salt.
In another large bowl, combine sugars, eggs, melted butter and vanilla.
Add the flour mixture to the sugar/butter mixture and stir to combine. Do not over mix.
Fold in grated zucchini and 1 cup of chocolate chips.
Spread batter in prepared loaf pans and sprinkle remaining chocolate chips over top.
Bake for 45-55 minutes or until an inserted knife comes out clean. Cool in pans for 5 minutes then turn out onto cooling rack. Completely cool before slicing.
